I've been toying with this idea but since I won't make it anytime soon how about try to make a Pineapple Upside Down Cake Ice Cream. My idea would be Pineapple ice cream, with bits of caramelized pineapple, yellow cake crumbs and pieces of maraschino cherries.
Trader Joe's has these really tasty Chile Spiced Mangos ... maybe something that incorporates those... a not too sweet lime base perhaps?
I have never enjoyed spicy ice cream. My tiny brain has problems with it because ice cream is supposed to be cooling and soothing.
